Gluten Free Bhakti Chocolate Apricot Cake a la Volcano

* The volcano part happens when you can’t get the cake out of the bundt form- leaving yet another pour over of Bhakti-Apricot glaze!

Ingredients

  • 4 cups chickpeas, cooked and drained
  • 2/3 cup Bhakti Chai
Concentrate
  • 8 eggs
  • 2 cups brown sugar
  • 1/2 cup cocoa
  • 1 cup chocolate chips
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder

Bhakti/apricot Glaze:

  • 1 1/2 cup Bhakti
Chai Concentrate
  • 2 Tsp Orange zest
  • 1/4 cup Honey
  • 
1/4 Cardamom
  • 1/2 pound Apricot

Simmer everything for a few minutes. Let stand until Apricots are plump and cooled. Blend and pour over Cake

Preparation

Melt choc chips in double boiler. 
Throw everything else in food processor or blender. 
Add molten choc chips to blender mix. 
Bake in pan (oil well) for 40-50 min at 350.
